Jam Roly Poly

Serves 6

Ingredients

  • 1 cup of butter, plus 2 extra tbsp
  • 2 cups self-raising flour
  • 2 tbsp cold water
  • 1 jar of Saha Organic Fruit Jam
  • 1/2 cup sugar
  • 2 cups boiling water

Directions

  • Rub the butter into the flour with your fingers. Add water and mix into dough. Roll out with a rolling pin and spread with Saha Organic Fruit jam.
  • Roll up, sealing the edges. Place in a large baking dish.
  • Slash the top diagonally three times.
  • Refrigerate for 1 hour.
  • Preheat oven to 180C.
  • Meanwhile, dissolve the sugar and 2 tbsp of butter in the boiling water.
  • Pour this syrup over the roll and bake for 40 minutes.

Serve with ice-cream or cream with excess syrup drizzled over the top.
