Dibbes, sometimes referred to as "grape honey", is made of boiled down fresh grape juice to the consistency of molasses. Since grapes are seasonal, the only way to preserve grape juice without using preservatives is by turning it into Dibbes ( or wine... ). The syrupy juice produced lasts unfermented for a period of years. Dibbes is highly prized as a drink both in concentrated form and when mixed with water (Click here for recipes).
Hebron's metropolitan area forms in a very high settled part of the country. Because of this height, nights are cool, the dew is heavy in summer, and there is plenty of winter rain (20 inches per year). The valleys mix alluvial soil with fertile loess (formed by sand blown in from the desert). All these factors combine to produce the legendary Hebron grapes
