Syrian Pressed Olives

SAHA's Syrian pressed olives are produced by a group of women in the Arab village Kfar Kara in Israel's Wadi Ara.  The women handpick the olives from trees they grow themselves and buy them from their neighbors.  The trees are of a Syrian variety common in the Wadi Ara region. Collectively, the women press the olives, and brine them according to a traditional recipe in salt water, flavored with olive oil, lemon and a bit of chilli for extra zing.
