The hyssop is a herb local to the middle east.  The women of the Zaytun Farmer's Co-operation produce a wonderfully tasty, traditional spice mix that can be used in a variety of ways: to add flavor to salads, in marinades for grilling vegetables, fish and poultry or simply combined with SAHA olive oil and spread on bread (Click here for recipes).
In accordance with the traditional recipe, the women pick the hyssop, sun dry the leaves and then grind them while combining them with other spices such as salt, sumac and sesame seeds.
